[Vegetarianslimming] Karen's Breakfast Muffin



Breakfast Muffin

1 Thomas' 2X Fiber whole wheat english muffin
1/4 c. egg substitute
1 Morningstar Farms breakfast patty
1 tbsp. benecol (recommended cholesterol lowering amount)
1 tbsp. 2% Four cheese blend shredded cheese (optional)
1 tbsp. salsa (optional)

Toast the muffin, spread with benecol. Heat patty according to package directions. Lightly spray a ramekin with olive oil spray, add egg substitute. Microwave one minute. Assemble muffin.

289 calories, 12.8 g fat, 4.5 g saturated fat, 1.4 mg cholesterol, 10 g fiber, 647 mg sodium (wow), 20.9 g protein
