[Vegetarianslimming] Three Sisters Soup

 

I know... this is not a hot soup kind of season, but hey... Three Sisters
Soup is my favorite and I can't find an authentic version online. Three
Sisters Soup should combine squash (usually zucchini), corn, and green
(string) beans, not the junk I keep finding online. I buy it every year at the
Native American Pow Wow near me in early June, but I'd really like to be able
to make it myself. Do any of you have an authentic recipe for it? These
are what I found online... and they're not right!


Three Sisters Soup

Serving Size : 6
3 pounds winter squash (such as acorn or hubbard) or pie pumpkin
3 small onions -- chopped
3 cups bouillon
3 teaspoons mild chili powder
3 cans cannelini or other white beans -- (16-19 oz.) undrained
3 cups fresh or frozen lima beans
3 cups frozen corn kernels
3 tablespoons chopped chives or green onions for garnish
Preheat oven to 400. Cover a cookie sheet with aluminum foil. Cut the
winter squash in half, remove the seeds and lay it on the cookie sheet, cut
sides down. Bake the squash for 30-45 minutes, or until the flesh is soft
enough to scoop out with a spoon.
Meanwhile, bring 1/2 cup of the bouillon to a boil, add the onions and cook
5- 10 minutes. Stir in the rest of the bouillon, the Southwestern Spice
Blend and the white beans. Simmer gently until the squash is ready. Scoop the
soft squash flesh out of the shells and stir it into the soup. Mash the
beans and squash slightly to thicken the soup. (You can puree it in a blender
if you want a really smooth consistency.) Add the lima beans and simmer 10
minutes or until the beans are tender. Stir in the corn, ladle the soup
into bowls and garnish each serving with chopped chives or green onions.6-8

1. Heat the olive oil in a large soup pot over medium heat. Add the
onion, garlic and celery. Cook together for 4-5 minutes, until the onions
are shiny and translucent.
2. Stir in the oregano and cumin. Saute for 2 minutes.
3. Add the squash, beans and tomatoes. Cook for 5 minutes.
4. Break the ears of corn in half and add it to the pot.
5. Add 3 c of water (or more if necessary). Simmer for 15 minutes.
6. Add salt and pepper to taste.

Closer, but no cigar...

Three Sisters Soup

Prep Time: 15 Minutes Ready In: 45 Minutes
Cook Time: 30 Minutes Servings: 6

Ingredients:
2 cups canned white or yellow hominy,drained
2 cups fresh green beans, trimmed and snapped
2 cups peeled and cubed butternut squash
1 1/2 cups diced peeled potatoes
5 cups water
1 1/2 tablespoons chicken bouillon granules
2 tablespoons low fat butter substitute, melted
2 tablespoons all-purpose flour
1/4 teaspoon pepper

Directions:
1.Place the hominy, green beans, squash, and potatoes into a
pot, and pour in water and chicken bouillon. Bring to a boil,
then reduce heat to low, and simmer until vegetables are soft,
about 10 minutes. Blend flour into the butter, then stir into
the soup. Increase heat to medium, and cook for 5 more
minutes, or until soup thickens. Season with pepper, and serve.

Congratulations, Dear Dragon...

However, I'm new to this group. What is thyroxine? It sounds like a
thyroid supplement. I take synthroid. Is this similar?

Way To Go!!!!!! That is something to celebrate! I hope things work out well with the medications. Don't get frustrated sometimes it takes time to get it all right.

Finally got the rest of the results back on Tuesday , cholesterol absolutely perfect (up yours
the dietician who was horrified that I didn't eat Flora or some such
but actually had butter and full fat cheese and mayonnaise! ) and diabetes - nope! blood sugars are bang
on as well - so the docs are really pleased that
they only have one thing to get right which is the thyroxine , so now I just need to get the dosage
right and then hopefully I can start shifting some of this blubber

I am so glad I only have the thyroid to sort out - hopefully that WILL be soon and then I can start shifting this weight!  I still doubt that I will be any slimmer by the time we meet up again!
