Hi Cindi, Thanks for the welcome!
So far, this week has been good. I'm about to head for the grocery store as I spent some time this morning coming up with dinners for the week.
Right now I am working on remaking some family favorites and introducing a couple of new recipes. My husband said he'll eat anything I fix as long as it tastes good. (he actually liked a vegan tamale pie I made that I hated!) My 22 y.o. daughter is open to anything and is altering meals on her own so that I can eat them and my 19 y.o. son says just don't tell him it's vegan and he'll eat it.
I figure the longer I stick with it , the better I get at it!

  My name is Robin and I am 54, married with 3 children (two still at home).
I am diabetic with all the issues that go along with it. After reading
"Reversing Diabetes" by Dr. Neal Barnhard, I decided vegan was the way to
go.


*Are you vegetarian, vegan or neither?

  I am eating vegan as of this past Weds. 5 days!

*Are you looking to lose weight?
  Lose weight, lower blood sugars and cholesterol

*Where do you live? Are you the only vegetarian in your household? Etc.
  I live in Hewitt, TX, just south of Waco. I am the only vegan in the
household. My 22 y.o. daughter is dairy free due to IBS and my 29 y.o.
daughter (who lives in Boston, MA) is vegetarian

*What do you hope to gain out of our group?
  Advice, support and cooking tips

*Have you been a member of Vegetarian Slimming in the past?
  No.

*Do you have tasty low fat recipes to share? :-) It's ok if you don't, of
course!

[Vegetarianslimming] Slimming Soup

 

I've been looking through the soup recipes, now that the weather has turned, to see what kinds of good soups are posted in the files. There's quite a variety. I didn't see anything like one of my favorite lunchtime soups, though. It's a favorite because it takes even less work and up front time than most soups. And it always tastes so fresh that I even have it sometimes in the summer. I got the original from 101 Cookbooks.

My office lunch version of 10 Minute Couscous Soup--
Bouillon or stock concentrate to make about 1 1/2 cps veg. broth (no need to reconstitute it yet)
Small pinch red pepper flakes
Up to 1/4 cup wheat, barley, or regular couscous
1/2 cup or so frozen broccoli
1/2 cup or so frozen cauliflower
bit of sun-dried tomato if you have it (I often forget it)
bit of chopped onion or green onion
Sometimes I add a little yellow squash or zucchini

I throw all that into a container for work and when lunch time comes, I add the water to reconstitute the broth and put it into a microwave for a few minutes. Notice the quantities aren't exact--it's a very forgiving recipe. I wouldn't make it in advance. You know how overdone broccoli can be. If I've gone lightly on the vegetables, I take some salad for lunch as well.

            In Western Pa. and it's just me and the dog....i don't think
he's a vegetarian.

              Sort of....i have some that I've collected, and I just made a
savory bread pudding, that is not low in fat per se, but is not high in fat
either....and you don't eat much of it at a time.

Hello there, Kate,

I'm in Chester, UK and have been a veggie for about 40 years and vegan for 35. My kids are veggie and so is my grandson but then he's only 9 months old.

Not much into recipes as I'm a stick in the mud and tend to stick to a tried dozen or so meals I enjoy.

THOUGHT FOR FOOD!

1. The Thought:

Do Vegetarians and Vegans ever need to lose weight? Of course we do (through a variety of circumstances, which usually boils down to taking in more fuel than we are able to burn off). Sad but true, fat happens. Something we can do on this list is exchange wonderful recipes in keeping with our needs. (The exercise is up to you - but we're with you in spirit!) As a quick rule of thumb, it's best to eat a variety of fruits and vegetables, the more colours the better, whole grains rather than refined grains, and less processed food and sugars.

2. The Food:

SLIMMING: Of course, *all* recipes sent here should be vegetarian, tried-and-true *and* suitable for slimming (weight loss), which is to say not loaded with high-calorie ingredients such as too much sugar, dried fruit, sweetened preserves, etc. That's just obvious. Also, however, please note that this is a low-fat group and we, therefore, draw attention to some foods that should be either avoided or used only in small amounts in the recipes posted:

* full-fat dairy, including cheese, cream, yoghurt, butter, etc.
* full-fat soy products
* coconut cream and milk
* most nuts
* margarine and cooking oils
* peanut butter and the like
* mayonnaise and fatty salad dressings
* olives
* avocados

There are probably more (send them in if you think of them!) to be added, but this gives the general idea. Many dairy and soy products, nut butters and coconut milks, etc., can frequently be found in low-fat form and these are more suitable. Other ingredients (dairy cheese, for eg., and nuts, fatty fruits, etc.) are great for garnish, of course, and/or a little added flavour, but not as a major ingredient.

(A good tip: Always read the nutritional data even on packages of prepared foods labelled Vegetarian or Vegan, including faux 'meats'.)

NEW VEGETARIAN SLIMMING GUIDELINES
(As of May 2006, with minor amendments September 2008)

1. Posts should be of general interest about
vegetarian health and slimming (weight loss),
including recipes (see below). This is not the place,
however, for medical advice.

2. We welcome only *Tried-and-True* recipes
(kitchen-tested by the member) which are low-fat as
well as low in sugar and calories, suitable for
slimming/weight loss. Recipes must be vegetarian (or
vegan) and edited to exclude all references to meat
and dead-animal products. Eggs, dairy and honey are
permitted. Please indicate the source of any recipes
which you did not originate yourself.
Please post the recipes to the list in the usual manner,
adding an indication "Recipe" in the subject line.
A moderator will then place the recipes in
the appropriate folder in the Files on our web page.

3. Please observe the following:
No anti-vegetarian (or anti-vegan) posts or material;
no political and/or religious posts or material; no
commercial posts or material which benefit, directly
or indirectly, the member or the member's family in any
way. (Links to members' own *non*-commercial web pages,
blogs and/or groups may be included in the Members'
