[Vegetarianslimming] Happy talking, talking, happy talk!

 

Yes!!!!! for the first time in weeks (months even!) I have lost weight - since last Friday morning I have lost 3.74 pounds or 1.7 kg - okay so I am still 23 stone 2.74 pounds (and need to be under 22 stone to register on the home scales so need to lose 17 pounds still to do that!) BUT I have lost weight and that is a great feeling :)

I can't weigh in next week (not at the doctors but at the hospital instead) so another fortnight before I can have another weight check and that is so annoying as it seems I am back on track!  Ah well keep checking in on Calorie Count and hope for the best!  Oh and keep stitching so I don't think about food LOL

Here are a couple of dishes that I have brought to Thanksgiving dinner
in the past that my non-vegetarian family really enjoyed and requested
that I bring again:

Mushrooms with Wild Rice - 6 Servings
(from the now defunct fat-free vegetarian mailing list)
If I can't find a particular type of mushroom, I just substitute another type

1 cup wild rice
2 1/2 cups water
1 Tbs low-sodium soy sauce
1/4 cup minced scallions

1 medium yellow onion, chopped
2 stalks celery, chopped
1/4 cup water (1/2 cup water)
1/2 lb white button mushrooms, sliced
8 fresh shiitake mushrooms (6 huge ones, discard the stems)
2/3 cup chopped oyster mushrooms (add 1/4 cup chopped morel mushrooms)

1/4 cup trimmed enoki mushrooms
2 Tbs low-sodium soy sauce
1/2 tsp dried sage
1/4 tsp poultry seasoning
Freshly ground black pepper to taste

Place rice, water, soy sauce, and scallions in a saucepan with a
tight-fitting lid.  Bring to a boil, reduce heat, cover and cook over
medium heat until liquid has evaporated and rice is tender, about 1
hour. Set aside.

Place onion, celery and water in a large pan.  Cook and stir for
several minutes, until vegetables soften slightly.  Add button,
shiitake and oyster mushrooms (I also added morels).  Cook, stirring
occasionally, for 10 minutes.

Gently stir in cooked rice, enoki mushrooms, and seasonings.  Cook
over low heat for another 15 minutes

Harvest Vegetable Torte – 12 Servings  (not slimming)
This is actually easier than it initially looks and looks quite
impressive when finished

Ingredients

3 medium sweet potatoes (1 3/4 lbs.)
2 Tbs. butter, softened
2 large eggs, beaten lightly
2 Tbs. olive oil
1 cup chopped leeks
2 lbs. cremini mushrooms, coarsely chopped
4 cloves garlic, minced
2 Tbs. chopped fresh thyme, or 1/2 tsp. dried
15-oz. container part-skim ricotta
3 (10-oz.) pkgs. frozen chopped spinach, thawed and squeezed dry
3 large egg whites
1/4 cup chopped fresh dill or parsley
1/4 tsp. red pepper flakes
1 pkg. (171/4 oz.) frozen puff pastry, thawed
Egg wash: 1 beaten egg mixed with 1 tsp. water
Fresh herb sprigs for garnish

Directions

Peel and quarter sweet potatoes. Place in large pot, cover potatoes by
1 inch with salted cold water and simmer until tender, about 20
minutes. Drain potatoes, transfer to medium bowl and, while still
warm, coarsely mash. Using electric mixer, beat in butter, eggs, salt
and pepper to taste until smooth.

In large skillet, heat oil over medium heat. Add leeks and cook,
stirring often, until softened, about 10 minutes. Add mushrooms and
garlic and cook, stirring often, until mushrooms release their liquid;
allow to evaporate. Stir in thyme and season to taste with salt and
freshly ground pepper. Remove pan from heat and let cool.

In medium bowl, mix ricotta cheese, spinach, egg whites, dill, red
pepper flakes and 1/2 teaspoon salt until blended.

Preheat oven to 375°F. Unfold one puff pastry sheet and place on
lightly floured surface. Roll out to a 14-inch square, then cut dough
into a 14-inch circle. Transfer circle to ungreased 8 1/2 - or 9-inch
springform pan and press gently to fit into bottom and side (there
will be some overhang for folding over top of pie).

Spoon sweet potato mixture into pastry and pat into even layer. Spoon
mushroom mixture over potatoes and spread evenly. Top with spinach
mixture (filling may come slightly over top of pan). Carefully fold
pastry overhang on top of the filling. Brush edges with egg wash and
seal.

Unfold second puff pastry sheet on lightly floured surface. Roll out
slightly, then cut into an 8 1/2- or 9-inch circle. Place circle of
dough over top and press edges into pan to seal. Brush top with egg
wash and, using a small sharp knife or razor blade, slash top in a
cross-hatch pattern.

Bake 35 to 40 minutes. When well browned, loosely cover top with foil.
Reduce heat to 350°F. Carefully remove side of pan and brush sides
with egg wash. Bake until sides are golden, about 35 to 40 minutes.
Remove from oven and let cool slightly before cutting into wedges and
serving. Garnish with fresh herb sprigs.

[Vegetarianslimming] Tuesday and Dragon doing okay!

 

Okay I had a reasonable stitching night last night (now have over 4 of the 12 boxes marked out), today I am dressing gowning it until 3pm or 3.30pm as I am getting the dressing changed today and so can shower an hour before that! *phew* lol

I hope to get more stitching done this evening and certainly the rest of this week, stitching and my weight are my two major elephants in the room.  Weight wise I started tracking again yesterday (finally tings are coming together with the rest of my health and I feel I can start tackling this one again), when it comes to stitching I KNOW the Medieval Sampler is not on my current stitching list BUT it is something I am doing and that has got to be a good thing right?

So my plans for the rest of the week are

1.   Finish the boxes on the Sampler
2.   Clean the loo/sinks and stove top
3.   Make sure I eat enough kcals (I actually went a smidgeon over yesterday! almost unknown for me)

Sorry this is seriously cross posted but it is the easiest for me at the moment

[Vegetarianslimming] A bit of a giggle

 


Okay we have all heard the adage "I'm not overweight, I'm
undertall!" so bearing in mind the ideal BMI is between 18.5 and 25 I
picked 22 as a good mid point and worked out that at my current weight I
would be a major basketball player at 8 foot 6 inches tall!

So I don't need to lose a lot of weight I need to lose 3 feet in
height *grin* - bearing that in mind how much height do you need to lose
to have a BMI of about 22?

I'm one of those "bit of this, bit of that" cooks . . . cooked rice, maybe a
combination of wild and brown, fry up some onions and celery to add, put in
your usual stuffing spices, add some cranberries or almonds if you like . .

[Vegetarianslimming] Thanksgiving Ideas: homemade tofurkey with stuffing; and/or Stuffed Hubbard Squash

 

Stuffed Hubbard square; e.g. a very large turquoise green Hubbard squash
stuffed with brown rice, chestnuts and walnuts and almonds, raisins and/or
currants, bread stuffing?, and some molasses to sweeten the stuffing...

Anything on the CRANBERRY theme is lovely - cranberry bread, cranberries
from Cape Cod in Massachusetts (very traditional in Massachusetts), or even
the typical "thump it out of the can onto the plate" cranberry relish.

Lots of vegetables, and of course, a cornucopia.

But here in Florida, I saw a frozen Tofurkey in the grocery store this
afternoon.

Oh, and making your own tofurkey?
OK. Extra firm tofu blended, with savory flavorings in the tofu, then we
BUILD the 'faux turkey' AROUND the stuffing (described above).
So the Flavored tofu makes a base, then we lump the 'stuffing' onto the
base, then we MOLD the (drained) 'blended tofu around the 'stuffing' and
make a homemade 'Tofurkey' with 'frills' for feet or cardboard cutouts for
'feet' and while the homemade 'Tofurkey' is being 'baked', we 'baste' the
homemade Tofurkey every so often (periodically).

OK. So that's not a slimming recipe...

NEW VEGETARIAN SLIMMING GUIDELINES
(As of May 2006, with minor amendments September 2008)

1. Posts should be of general interest about
vegetarian health and slimming (weight loss),
including recipes (see below). This is not the place,
however, for medical advice.

2. We welcome only *Tried-and-True* recipes
(kitchen-tested by the member) which are low-fat as
well as low in sugar and calories, suitable for
slimming/weight loss. Recipes must be vegetarian (or
vegan) and edited to exclude all references to meat
and dead-animal products. Eggs, dairy and honey are
permitted. Please indicate the source of any recipes
which you did not originate yourself.
Please post the recipes to the list in the usual manner,
adding an indication "Recipe" in the subject line.
A moderator will then place the recipes in
the appropriate folder in the Files on our web page.

3. Please observe the following:
No anti-vegetarian (or anti-vegan) posts or material;
no political and/or religious posts or material; no

THOUGHT FOR FOOD!

1. The Thought:

Do Vegetarians and Vegans ever need to lose weight? Of course we do (through a variety of circumstances, which usually boils down to taking in more fuel than we are able to burn off). Sad but true, fat happens. Something we can do on this list is exchange wonderful recipes in keeping with our needs. (The exercise is up to you - but we're with you in spirit!) As a quick rule of thumb, it's best to eat a variety of fruits and vegetables, the more colours the better, whole grains rather than refined grains, and less processed food and sugars.

2. The Food:

SLIMMING: Of course, *all* recipes sent here should be vegetarian, tried-and-true *and* suitable for slimming (weight loss), which is to say not loaded with high-calorie ingredients such as too much sugar, dried fruit, sweetened preserves, etc. That's just obvious. Also, however, please note that this is a low-fat group and we, therefore, draw attention to some foods that should be either avoided or used only in small amounts in the recipes posted:

* full-fat dairy, including cheese, cream, yoghurt, butter, etc.
* full-fat soy products
* coconut cream and milk
* most nuts
* margarine and cooking oils
* peanut butter and the like
* mayonnaise and fatty salad dressings
* olives
* avocados

There are probably more (send them in if you think of them!) to be added, but this gives the general idea. Many dairy and soy products, nut butters and coconut milks, etc., can frequently be found in low-fat form and these are more suitable. Other ingredients (dairy cheese, for eg., and nuts, fatty fruits, etc.) are great for garnish, of course, and/or a little added flavour, but not as a major ingredient.

(A good tip: Always read the nutritional data even on packages of prepared foods labelled Vegetarian or Vegan, including faux 'meats'.)
