[Vegetarianslimming] Vegetarian Meatballs

 

Dear Friends,

I've gotten my kids eating and enjoying Morningstar veggie burgers, Boca
veggie burgers, and Boca original vegan burgers. Yeah! I wonder why Boca
is so much lower in fat and calories and higher in protein than
Morningstar... not that Morningstar is bad. Boca is just a tad healthier somehow.

They ate the burgers for lunch today at a Randy Rymer and the Little Band
that Could concert at my library today, and they're having Morningstar
sausages with their eggs for breakfast tomorrow and more burgers (different
variety) for lunch. Here's the problem, though. They want ravioli and
meatballs for dinner tonight!

They're both okay with the idea of vegetarian meatballs, but I looked for
them in the Boca/Morningstar section and couldn't find them! I found a few
recipes online, but they're not tried and true, and this would be my first
shot at vegetarian meatballs.

I'll run back to the store if any of you could send me a recipe for low
fat, low calorie vegetarian meatballs... um... quickly? Otherwise, I'll be
forced to crumble up some Boca burgers, mix them with eggs and oatmeal, and
hope for the best. Here's what I found online, but I don't know if it's any
good. I'd much rather try a recipe that you've made and enjoyed in the
past. Many thanks!

Vegetarian "meatballs"

2½ hours | 30 min prep
SERVES 4 -6

* 4 _eggs_ (http://www.recipezaar.com/library/getentry.zsp?id=142) ,
slightly beaten
* 1 (1 1/4 ounce) envelope Lipton Onion Soup Mix
* 2 cups grated _cheddar cheese_

* 3/4 cup chopped _walnuts_

* 1 cup dry Italian style breadcrumbs
* 2 (1 1/4 ounce) envelopes vegetarian broth (I use G.Washington
brown broth)

1. Mix ingredients together in order.
2. Refrigerate for 30 minutes.
3. Form into 1-1/4 inch balls and place on baking sheet sprayed with
Pam.
4. Bake in 400 degree oven until brown, about 20 minutes.
5. (May be frozen now.) Place meatballs in casserole and cover with
2-3 cups boiling water and 2-3 cubes or envelopes vegetarian brown broth.
6. Meatballs should be within 1/2 inch of being covered with liquid.
7. Bake, covered, at 350 degrees for 1 hour (1-1/2 hrs if meatballs
are frozen).
8. Or meatballs may be prepared in a crockpot on high setting for 1
hour (or 1-1/2 if frozen).

Meatless Meatballs


Prep Time: 25 minutes
Cook Time: 25 minutes
Total Time: 50 minutes
Ingredients:
* 12 oz. roll frozen ground beef substitute, thawed
* 1 egg
* 1/2 cup dry bread crumbs
* 1/4 cup milk
* 2 Tbsp. mustard
* 1 Tbsp. ketchup
* 1/2 tsp. dried thyme leaves
* 1/2 tsp. salt
* 1/8 tsp. pepper
Preparation:
Combine all ingredients in a large bowl and mix gently with your hands.
(You may need to add more milk or bread crumbs to form a shapeable mixture,
depending on the variety of beef substitute you use.) Form into 1"
meatballs. Chill for 1-2 hours.
Preheat oven to 350 degrees F. Bake meatballs for 20-30 minutes until firm
and hot. You can then freeze these meatballs and use in other recipes that
call for frozen precooked meatballs. Makes about 30.
