Re: [Vegetarianslimming] Over to Cindi and Piers :)

Thanks, Dragon - I'm still alive, kicking and here, just not ruling the roost (can she-birds do that, I wonder?) :)

Love, Pat

Okay, everyone, this is just to thank you all for being wonderful members of this group and being such good friends over all these years since the group started. AND it's to say that sadly family commitments make it necessary to scale down my operations on Yahoo etc. Therefore, I am resigning as a Co-owner of Vegetarian Slimming as of pretty well now :) and turning it all over to my wonderful Co-owner Cindi and to former co-owner and now moderator Piers, both of whom you can all rely on to keep the wheels turning etc.

I do wish you all the best in your endeavour to be healthy and fit, and hope that those of you who manage to do that will be a wonderful example to new people who join. Everyone deserves a good and healthy life; it just takes a little effort (and only a little, believe me) to achieve it the vegetarian way!

Love and hugs to you all,

Pat

Re: [Vegetarianslimming] Quick mixed vegetable curry

OK, thought that's what had probably happened :) What I'll do is change your recipe to say something like:
1 Tbsp. oil (or as little as you can get away with)

That covers a multitude of sins, eh? LOL

Thanks for the reply. Shall go and do that now!

Love, Pat

Oops sorry yes Pat!

I wrote it out as is from the book, we normally find about a third to half the oil they say is enough!

Hi Dragon,

Thanks for the recipe! - Quick and easy. One word: There's really no need on a low-fat cooking group to use as much oil for cooking as the recipe says. I shall make a note on the file that less would be better :)

Best, Pat

Quick Mixed Vegetable Curry (serves 4)
Taken from "The Curry Book" Laxmi Khurana, Asha Naran and Shelina Jetha

Ingredients

45ml cooking oil
0.5 tsp cumin seeds
0.5 tsp black mustard seeds
1 large onion, finely chopped
2 tsp tomato puree
1 tsp turmeric powder
1 tsp chilli powder
1 tsp garam masala
1 tsp salt
1 tsp garlic powder
450g frozen, mixed vegetables
2 small potatoes, chopped into very small pieces
300 ml water

Method

Heat
the oil to a high temperature in a pan, add the cumin, black mustard
and chopped onion. Cook together until the onion is golden brown.

Add
the tomato puree, turmeric powder, chilli powder, garam masala, salt,
garlic powder, mixed vegetables and potatoes. Stir continuously and
cook for a further 5 minutes.

Add the water to the vegetables, and bring to the boil. Reduce the heat and simmer gently for about 20 minutes. Serve hot.
