Hi Cassie,

Do you follow the Lunch Box Diet, or do you just have a big salad for lunch
every day? I ask because you said you¹re hungry 3 hours later, but if you
follow this diet you are eating every hour, so that wouldn¹t happen.

My favorite combinations have been a salad mix (spinach, rocket and kale),
some kind of sprouts, tomato, cucumber, broccoli and chunks of either
rosemary roasted sweet potatoes or carrots. For the protein I dice some
vegetarian (chicken style) roast, which was baked in the rosemary and mint
glaze that comes with it, or I grill up a veggie burger, dice it and toss it
in the box. For the dressing I either use my home made hummus, or some
ranch dressing. Toss this all together so everything gets a bit of the
dressing on it and put it in the lunch box. Right now I¹m using a 2.5 liter
box, but in the beginning I was using a larger one.

I¹m not a fan of tempeh, but I have used leftover scrambled tofu for the
protein, though I don¹t care for it served cold. I have also used a mix of
kidney beans, salsa and Toffutti for the protein and fat portion. Remember
veggies are about 60% of the volume in the box, protein about 30% and fat
about 10%.

You eat your normal breakfast and dinner, and then between the hours of 10
and 5 (or whatever works for you) you are grazing out of that lunch box
about every hour. Just a few bites or enough to feel satisfied, never full.
If you feel hungry again, just eat some more out of the box. If I ate this
entire salad in one sitting for lunch, I would definitely get hungry later.
But because I graze from it throughout the day, I¹m never hungry. I
sometimes can¹t even finish what¹s in the box.

My breakfast is usually toasted muesli with soy milk (about a cup each) and
I often have a banana with that. My dinners are usually things like veggie
burgers, or home made lentil soup, pizza rolls, or pasta. I find I¹m
averaging 1400-1600 calories a day, but you do not have to count calories on
this plan.
