I think I got this from a vegetarian yahoo group.  It's not really slimming and I actually haven't made it in probably a year.  I'm off dairy of all kinds since Jan, so I make my own pesto (cashew base).  I'm wondering how nutritional yeast would taste with spinach and pesto..... If you eat faux cheese, this would probably be really yummy (I'm soy-free as well, so none for me)

Stuffed Tomatoes

6 large tomatoes

2 tbsp pesto (homemade or jarred)

1/4 cup bread crumbs

3/4 cup chopped green onions

1 cup shredded mozzerella

Slice

tomatoes in half cross-wise and scoop out, leaving about 1/4 inch left

in shell.  Mix the pesto, bread crumbs, and green onions in a small

bowl.  Fill each tomato with the pesto mixture.  Place stuffed tomatoes

in a greased baking pan.  Bake at 350 for 25 minutes.  Pull them out of

the oven and sprinkle with cheese.  Bake for another 3-5 minutes, until

cheese is melted and starting to crust.

Enjoy as a side dish or a main entree with a rice side.

I'm a true potato lover and think these would taste great with baked potato slices or wedges, over rice.  But, you could make it a pesto rice salad with red peppers and broc florets.  It'd be a nice compliment :)
