[Vegetarianslimming] Authentic Russian Butternut Squash & Brussels Sprouts

 

Authentic Russian Butternut Squash & Brussels Sprouts (real name
unpronounceable and beyond my skills at spelling)

This is also from one of my Russian friends at work, Jane in particular.
This woman is so slender, she can slip through the crack of a closed door.
If she says eat it, eat it. She was brought up vegetarian/vegan in Russia
and has never eaten any other way in her life. I don't think she knows
any other way, but her food is sensational. Why would she consider any other
way?

1 Butternut Squash, peeled and cubed (you can nuke it in the microwave for
a few minutes or keep it in the oven while its preheating to make this
easier)
1 package fresh Brussels Sprouts, cut in half (I used sweet pea pods
instead to please my children, still yummy)
1 can or small bag frozen sweet kernel corn (niblets)
1 large sweet onion, preferably Vidalia
brown sugar or splenda, to taste
cinnamon, to taste (sadly, my boys wouldn't let me use this)
fresh sliced white or baby bello mushrooms, optional
2 large sweet potatoes, cubed with skin

Preheat oven to 350-400 degrees. Put squash in the oven. Bake or nuke
squash to make skin easier to remove. Cook for 2-10 minutes. You just want
the squash soft enough to cut in half. Once you can cut it, do so. Remove
seeds. Put it back in the oven for 45 minutes (very vague about amount...
this is an authentic homemade Russian dish; it's not exact), more or less
depending on size of squash. Skin the squash. Cube the squash and sweet
potato. Put the squash, sweet potato, onion (which you may saute first with
the mushrooms, if you wish), mushrooms, corn , Brussels sprouts or sweet
peas, and seasonings (sugar and cinnamon plus salt if desired, to taste).
Bake another 15 minutes or so. Casserole with a Russian flare is ready...
and really delicious!
