At the bottom end of baking chocolate is Baker's, Ghirardelli, and Hershey's. The ingredients will only list chocolate or unsweetened chocolate. These are basic and one of them should be carried in most full service grocery stores.
Going up the quality scale, one of my favorites is Scharffen Berger which used to be made in Berkeley, California http://www.scharffe
Then you go into the fancy imported European chocolate. I have occasionally used them, but they don't tend to be available in the small community that I live in.
