Chinese Vegetarian Bean Curd Rolls
A vegetarian dish made with the same seaweed used to make sushi rolls.
Ingredients:
3 sheets dried bean curd
3 sheets yakinori (roasted seaweed used in sushi rolls)
Seasoning:
1 tablespoon light (reduced sodium) soy sauce
1 teaspoon salt
2 teaspoons sugar or Splenda
1 teaspoon pepper
1 teaspoon sesame oil
a pinch MSG (if desired)
3 cups water
Oil for frying
Preparation:
Heat water in the wok and add the remaining seasonings. Bring to a boil.
Lower
heat.
Fold the bean curd sheets into 4 squares. Boil the folded sheets in the
heated
water for 1 minute, using chopsticks to move the sheets around the boiling
water
as necessary. Drain.
In a baking tray, spread out the bean curd sheet and re-fold into a square.
Place a square of seaweed on top, and fold into an oblong shape.
In a wok or large skillet add oil. Fry the bean curd rolls on high heat
until
both sides are golden brown, adding more oil as needed. Slice into 1 - 1
1/2
inch (3 - 4 centimeter) pieces before serving.

Vegetable Burger
Preparation time: 10 min Servings: 4
Cooking time: 10 min
Ingredients:
2 eggs, beaten
1/2 Vidalia onion, chopped
1 carrot, peeled and chopped
1/2 cup mushrooms, finely chopped
1/2 cup seasoned dry breadcrumbs
2 tbsp unsalted butter or low fat butter substitute
1 cup walnuts, or pecans, finely ground
1/2 cup cooked brown rice or mixed grains
1 celery stalk, chopped
Cooking Directions:
Melt butter in a heavy nonstick skillet over medium-high heat. Sauté
onion, celery, mushrooms and carrot 5-7 minutes, stirring frequently
until softened.
Let cool to lukewarm. Turn on broiler. Stir in remaining ingredients and
salt and pepper to taste. Form mixture into patties. Arrange on broiler
pan and broil 5 in.from heat source about 5 minutes, until golden.
Great Grains Burger
Preparation time: 20 min
Servings: 6
Cooking time: 20 min
Ingredients:
2 tbsp grated reduced fat Parmesan cheese
1 tbsp reduced sodium Worcestershire sauce
1 egg, beaten
1 small onion, minced (half a Vidalia onion will taste better)
1/2 cup mushrooms, minced
1 tbsp olive oil
3 cups cooked short-grain brown rice (this rice is stickier, so the burger
holds together better on the grill)
1/4 cup ground oats
Cooking Directions:
Heat the oil in a small skillet over medium-high heat. Add the mushrooms
and onions and sauté until the mushrooms are dark and the onion is golden,
about 6-7 minutes. Prepare an outside grill with an oiled rack set 6 in.
above the heat source. On a gas grill, set the heat to medium. Combine the
mushrooms and onions with the remaining ingredients. Form the mixture into
6 patties. Grill the burgers, turning once, for a total of 6-7 minutes
until the outside is golden brown.
Potato Burgers
Preparation time: 10 min
Servings: 4
Cooking time: 5 min
Ingredients:
2 cups mashed potatoes
2 tbsp fat free milk (soy or almond milk okay)
1 tbsp flour or finely ground walnuts or almonds
1/2 cup mushrooms, finely diced
1 egg
salt and fresh ground black pepper, to taste
garlic, minced, to taste
1/4 cup vegetable oil or cooking spray
Cooking Directions:
Combine first 6 ingredients, mixing thoroughly. Shape into burgers, about
.5 in. thick. In a skillet, heat the oil or cooking spray,and add the
burgers. Cook for about 5-6 minutes, or until browned.
