Hi everyone, I am new to the group and excited to be here! I love sharing vegan recipes. In fact i Have been making a lot of raw soups and quick hot soups.
I have been a vegetarian for many years eating dairy occasionally. Two years ago I took a vegan cooking course...and I was hooked. I recently bought a raw cookbook and have been doing a lot of experimenting.
I made a butternut squash soup by baking the whole squash in the oven...scooping out the insides and putting it in the vita-mix with hot water , an apple and cinnamon. If you like it a little spicy I added some red pepper flakes to spice it up. Yummy!!

I've been most of my life, and weight is an ongoing issue for me (more as I
age, but I got a 10-15 year respite from overweight after becoming vegan).
For the abolitionists in the 'vegetarian slimming' group, we might call
this 'critical weight control studies' and maybe get the nerdy animal
theory folks involved (in 'weighty' matters).
In terms of 'advocacy', one could also think about the functional need for
US to be both (a) credible and (b) healthy (and long-lived and
fully-functional).
Call it '*critical vanguard studies*' on overweight vegetarians.
Meanwhile, I struggle to walk or climb (or descend) 10,000 steps/day.

Hi Tiffany:) I also quit smoking about 4 years ago and that plus going thru menopause put an extra 30 pounds on me. And once we get older it's even harder to get that weight back off. But, I am still SO glad that I was able to quit smoking (did it cold tofurkey~ heehee:)

[Vegetarianslimming] Tomato Basil Soup Recipe
Tomato Basil Soup
2 Tbsp. coconut oil
1 onion, chopped
4 carrots, peeled and chopped
1 leek, white part only, thinly sliced
3 stalks celery, diced
3 cloves garlic, chopped
4 cups vegetable broth
2 (28 oz.) cans fire-roasted whole tomatoes
leaves from 4 thyme sprigs
1 bay leaf
1/2 cup coconut creamer or unsweetened coconut milk
handful fresh chopped basil
sea salt & pepper to taste
Heat the coconut oil in a large stockpot over medium heat. Add onion, carrot, celery, and garlic;cook for about 10 minutes, stirring frequently. Add the veggie broth, tomatoes with juice, thyme and bay leaf. Bring to a boil, then reduce heat and simmer for about 30 minutes. Remove from heat and season with sea salt and pepper. Remove bay leaf and puree soup in blender or with hand blender. Add coconut creamer or coconut milk and fresh basil. Stir well to combine. Enjoy!

Hi Cindi:) I don't make the oil. The orchard is in Dripping Springs and is owned by a friend of my fiance. His family runs the orchard, from the hand-picking to the squeezing and bottling. We pick up product at the orchard, or they deliver sometimes, and we distribute it in the Houston area. They also sell at farmers markets in their area. We have farmers markets here year round. A couple of them take a break for a month or two in winter. Most are year round tho and we were at the farmers market on Christmas Eve and New Year's Eve:) The only day we won't do is Christmas day. We have markets that we do on Wed., Thursday night, Friday night, usually 3-4 on Saturday (I work one, my fiance another, his friend another...)One on Sunday. On Mondays and Tuesdays we usually do most of our delivering to some of the finer restaurants, hotels and shops here in Houston, ones that we have gotten the oil (and balsamic vinegars) into so far. We've been doing the
farmers markets and distributing oil for a couple years so far and we are doing pretty well with it, have some fun at the markets and events, and have met some interesting people, made some wonderful friends among other vendors and our customers. The oils we sell are organic, first cold press extra virgin and people are really enjoying them here. I love working at the farmers markets too, as we get to eat some really fresh local and organic produce, some good healthy meals:) Thanks for the welcome sweetie.
