RE: [VegetarianSlimming] returning member

Definitely!
Actually that's how I became veggie in the first place. I was eating a bacon sandwich at age 13 (I'd already given up all other meat apart from bacon and the occasional bit of chicken) that I had spent half an hour preparing (because I used to spend ages trimming off all the little fatty bits etc first, the rind, the edges of the round bit, anything else I didn't like the look of (ie most of it) which meant it took the best part of a whole pack of bacon to make one sandwich, very wasteful) and it dawned on me that I didn't even really like it that much. And my brain said, why the hell are you bothering to eat it then! I put it down and never ate meat again.

Hmm seeing as I could always take or leave bacon I might give this a miss!

You can still cook it with a grill or a frying pan, just watch it like a hawk and don't go wandering off or it'll go from raw to black in 0.2 seconds :-p

That's useful to know Cindy (I don't have a microwave though!), hmm might do the "fry up" with just a couple of poached eggs on rocket and watercress with cherry toms and the balsamic vinegar... (wanders off pondering)

RE: [VegetarianSlimming] returning member

It depends on whether you want it to taste like actual bacon (it doesn't). It's more like the fake bacon flavour you get with bacon crisps. This is a good thing for me as I hate actual bacon taste but quite like the fake kind!
I like the taste but find there is a knack to cooking it.
It cooks very quickly and burns easily. If you overcook it, it becomes fragile and tends to shatter! I have been known to skip frying or grilling and just nuke it in the microwave for a minute or so. I don't think it says to do this on the packet but it tasted alright and didn't kill me so I guess it's OK!!

The Hairy Bikers tend to do a lot of m*at - but I am hoping to adapt some for veggie stuff! In the 1st month they both lost about a stone (14 pounds), basically by cutting out a lot of the fat.

[VegetarianSlimming] Lunch Tod?ay

I figure if I tell you all what I eat now and then I might be inclined to keep it healthy - maybe :) Soooooo . . .

Lunch today was a green salad with a 'honey' (I used a little agave nectar - use what you've got, I figure) mustard dressing followed by ratatouille - not made according to usual recipe but all veggies (onion, garlic, eggplant/aubergine, zucchini/courgettes, green bell papper/capsicum, and heirloom tomatoes) thrown in more or less all together with a some dried herbs (used what I'd got again). Pretty good. Oh and my dh had some melon to follow that.

Not sure what's for dinner - we tend to eat our main meal in the middle of the day (one of the perks of being retired) so whatever it is will be light. Just as well after the big lunch - and it was indeed big!

[VegetarianSlimming] Food Processor Ideas / was Re: What's for lunch/dinner today?

Well, I _think_ mine was KitchenAid but I don't really remember. Not, I think, CuisineArt. (Ya see, I'm not exactly into brand loyalty.)

Funny, I worked without one for years and years, but found I loved having it for slicing vegetables, grating, and yes making seitan (the kind that mixes tofu in with the wheat gluten). I miss it now :(

I think I got this from a vegetarian yahoo group.  It's not really slimming and I actually haven't made it in probably a year.  I'm off dairy of all kinds since Jan, so I make my own pesto (cashew base).  I'm wondering how nutritional yeast would taste with spinach and pesto..... If you eat faux cheese, this would probably be really yummy (I'm soy-free as well, so none for me)

Stuffed Tomatoes

6 large tomatoes

2 tbsp pesto (homemade or jarred)

1/4 cup bread crumbs

3/4 cup chopped green onions

1 cup shredded mozzerella

Slice

tomatoes in half cross-wise and scoop out, leaving about 1/4 inch left

in shell.  Mix the pesto, bread crumbs, and green onions in a small

bowl.  Fill each tomato with the pesto mixture.  Place stuffed tomatoes

in a greased baking pan.  Bake at 350 for 25 minutes.  Pull them out of

the oven and sprinkle with cheese.  Bake for another 3-5 minutes, until

cheese is melted and starting to crust.

Enjoy as a side dish or a main entree with a rice side.

I'm a true potato lover and think these would taste great with baked potato slices or wedges, over rice.  But, you could make it a pesto rice salad with red peppers and broc florets.  It'd be a nice compliment :)

Stuffing is fresh bread crumbs, the juice/seeds from hollowing out the tomatoes, sauted onion, thyme, parsley, manchego cheese, salt & pepper. I'm going to add some sage this time. I think it will be a nice addition to the flavor.
