Hi Bunny,
 
I'm sorry this welcome is so late but I have been having huge computer problems.  Yahoo seems to have had me on their black list for some reason and I haven't been able to send any messages. 
 
Anyway, a belated welcome.  I'm Marie, 64, an expat Australian now living in The Netherlands.
 
You have hit the nail on the head.  We all know what we should be eating but knowing what to do and being able to put it into practice are two very different things.  That's where the support of the group is invaluable.

[Vegetarianslimming] Authentic Russian Butternut Squash & Brussels Sprouts

 

Authentic Russian Butternut Squash & Brussels Sprouts (real name
unpronounceable and beyond my skills at spelling)

This is also from one of my Russian friends at work, Jane in particular.
This woman is so slender, she can slip through the crack of a closed door.
If she says eat it, eat it. She was brought up vegetarian/vegan in Russia
and has never eaten any other way in her life. I don't think she knows
any other way, but her food is sensational. Why would she consider any other
way?

1 Butternut Squash, peeled and cubed (you can nuke it in the microwave for
a few minutes or keep it in the oven while its preheating to make this
easier)
1 package fresh Brussels Sprouts, cut in half (I used sweet pea pods
instead to please my children, still yummy)
1 can or small bag frozen sweet kernel corn (niblets)
1 large sweet onion, preferably Vidalia
brown sugar or splenda, to taste
cinnamon, to taste (sadly, my boys wouldn't let me use this)
fresh sliced white or baby bello mushrooms, optional
2 large sweet potatoes, cubed with skin

Preheat oven to 350-400 degrees. Put squash in the oven. Bake or nuke
squash to make skin easier to remove. Cook for 2-10 minutes. You just want
the squash soft enough to cut in half. Once you can cut it, do so. Remove
seeds. Put it back in the oven for 45 minutes (very vague about amount...
this is an authentic homemade Russian dish; it's not exact), more or less
depending on size of squash. Skin the squash. Cube the squash and sweet
potato. Put the squash, sweet potato, onion (which you may saute first with
the mushrooms, if you wish), mushrooms, corn , Brussels sprouts or sweet
peas, and seasonings (sugar and cinnamon plus salt if desired, to taste).
Bake another 15 minutes or so. Casserole with a Russian flare is ready...
and really delicious!

[Vegetarianslimming] Authentic Traditional Russian Borscht

 

This comes from my friend Jane at work who, despite her anglicized name,
was born in Russia, has been vegetarian all her life, and is waif model thin.
Enjoy...

Authentic Traditional Russian Borscht

Ingredients:
2-3 beets
1 large Vidalia onion
3 large or 5 small potatoes, cut into 1/4" slices
1/3 head cabbage, chopped
black peppercorns, to taste
1 shredded tomato
1-2 shredded/grated carrots
bunch fresh dill, to taste
Water or Veggie Broth

Directions:
1) Boil water (I use veggie broth); add potatoes, onion, and peppercorns.
2) Add carrots and beets.
3) Once good to taste, add chopped dill.
4) Serve with shredded tomato on top.

Note: This can be made in a slow cooker/crock pot

[Vegetarianslimming] Power cuts

 

Flipping things (well insert expletive of choice for flipping!) - almost every day this week the power has gone down and because of that I lose my internet connection (Dr Dragon is going to get a "something" that means we will keep power for half an hour - my internet goes through his computer so if his go down .. whammo!! no internet for me until he gets home *grump*)

Tracking food is going well (need to get to a Boots over the weekend to weigh in as I am next at the docs on Wednesday afternoon!), leg ulcer is officially healed (watch those fireworks folks!), I have to get custom made hosiery BUT it means that soon I can stop going to the nurse twice a week!

Stitching ... um yes! boredom set it and I want to start something new ... BUT I also want to finish stuff *aaaaargh*!!

Cleaning - done my tasks for the week and am therefore a happy Dragon!

I will confess I feel good this morning (tired but good lol).

The to-do list is going well only one item left to do this week and that is my second piece of stitching, the boxes for the sampler are done and so that has gone away for a while.  I am working on the golden lab puppy on the Perfect Pets now - but I can't do it at night :(

[Vegetarianslimming] Re:Monday worked out well!

 

I have been struggling with weight for some time. My daughter and I bought my wife a Wii, (at her behest), 544 days ago. How do I know? The Wii tells me how many days I've been using it when I click on my profile. Since that time I've lost 31 pounds. (Hold the applause, please). It can be one of the most depressing parts of the day when I get on the scale and it shows ANY positive amount. But it does. And it stings. And then I look at the log where I can see all 544 days as little dots across weeks, months, and years...and I see where it started and where it's been and where it is now and the daily gain gets put in perspective. It still hurts but just a little bit less. It actually becomes encouraging to see that there are so many little ups but the overall trend is down.

I think this graphic is a wonderful motivator. I don't use the Wii to exercise only to track the weight.

Another gizmo I recently, (a few months ago), purchased is the Bodybugg. I wear an armband 23 hours a day and it tracks my calories. I think it measures heart rate, sweat, skin resistance, steps and a few other parameters to come up with a calorie estimate. I have a little watch which I can look at any time during the day and see how many calories I've burned since midnight. It is a great motivator when I set my daily goal at 10000 steps and look down at 3 pm and only see 3000. I know I HAVE to get out for a walk.

I download the armband to the website every few days and it gives me a graph of all the measurable parameters. I'm mostly interested in calories burned.

Now here's what prompted me to write. Its the other side of the website, the feature which recently was the subject of a few articles about how to double your weight loss. (I think double.) Its the food logging. Another food logging program. I don't think it's the best but it's good and has a simplified method of creating a food listing that's not in the database.

Here's my difficulty and solution. I cook. A lot. I cook stuff that's not in any database. I made dinner for myself last night. Seitan Sausage, (http://www.everydaydish.tv/index.php?page=recipe&recipe=109), then sauteed with onions, garlic, peppers, pressed tofu, a few bunches of spinach and a sprinkle of hot pepper flakes and then I steamed it a bit by throwing in some soy sauce and broth left over from the earlier batch of seitan I made earlier in the week, (see the pic on the blog), and then put in a few dollops of tomato sauce from the eggplant parm, (vegan), from earlier in the week.

So how do I put down a calorie count for that? It's daunting. So you just have to look up some beef stir fry item and put down a few cups of that, over estimate, keep within your calorie budget, and hope for the best.

I also have a dietary goal. It's a tiny goal. I want to lose one OUNCE every day. If a pound is 16 oz and 3500 calories then my calorie deficit must be only 218 calories every day. Every day. Every single day. I don't stock up for the weekend or going out or when friends come over. Can't do that and expect to have any kind of consistent loss. That to me is a zero sum game and I'm not looking for anything close to zero sum. I work out when I can, almost always when I'm on the road and a few times a week when I'm on call at home or off, or walk across manhattan to pick up my daughter at school on the west side, or something. Remember I'm shooting for 10000 steps a day and 3400 calorie burn and 2800 calories consumed. If you did the math you know I have about 200 calories a day as a buffer in case my calorie consumption is a little off.

So far it's working and I can't really say I miss that 200 calories a day but I can say that I absolutely have to be, and judging from 31 pounds, (496 ozs), in 544 days, it seems to be slowly, consistently working.

My $ .02 and my plan. YMMV.
