[Vegetarianslimming] Sobbing Dragon

Well Dr Dragon took me to Boots and I weighed in (and BTW I do not like
the new scales!), I now weigh the same as I did when I first came off
the steroids so my weight for the start of June (can only weigh on a
Saturday so my month starts here!) is ...

22 stone 13 lb aka 321 lb aka 145.9kg

First target - below 22 stone 7 lbs, then below 22 stone and so forth!

I sometimes feel that it is just not worth it, I struggle, I plot, I track I do everything I can and the s*dding weight just goes up and up!

RE: [Vegetarianslimming] Weekly Menu?

I plan as well.  If not, we would rely on lots of pre-packaged, as I don't really think about cooking until I'm hungry.  Buying the fresh produce means I WILL eat it, as I have to prepare it before rotting occurs.  Therefore, even if I am not wanting to cook at all, I will make the dinner, even if it's for the following evening.  And, when school starts, I spend most of my Sunday shopping and cooking, as the days fly by trying to get into routines.  So, I really have to plan, even to the day.
I am a list maker, though, so I feel great crossing off the items on my list, or the meals for the day.
My most difficult task is remembering why I purchased most of the items.  I have a list of the meals I have planned on.  If it weren't for that, I would be hopeless :)

Hi Judy ~

I've been doing what you do lately. Just thinking of a few meals and making sure I have the ingredients on hand but planning out which day, etc.

Weekly menu? What a novel concept! I'm lucky to figure out a menu for the

next meal. LOL. Seriously though, I'm trying. I plan to cook once or

twice a week and pick recipes the week before for grocery shopping. I don't

plan which day, but it's a start.

Hi Nicole,

Can you share your recipe for making veggie burgers?

Thanks!

[Vegetarianslimming] New here

Hello everyone.

My name is Sunny. I was a vegetarian back in the 90's.
I felt great and lost a bunch of weight when I went veg.
After 7 years, I went back to the typical SAD diet. How
dumb was that? I gained back the 40 pounds I lost, and
gained even more on top of that. I have about 75 pounds
to lose.

Tomorrow I'm back to being vegetarian after having my
last grilled chicken for Memorial Day today.

Are you all following some particular plan, or just vegetarian
in general?

I'm looking forward to getting to know you all, and hope
you don't mind me hanging out here for support. I really think
it will help a lot.

Sunny

[Vegetarianslimming] Re: Dilemma of Eating out - baking choc

You are welcome to the recipe.

At the bottom end of baking chocolate is Baker's, Ghirardelli, and Hershey's. The ingredients will only list chocolate or unsweetened chocolate. These are basic and one of them should be carried in most full service grocery stores.

Going up the quality scale, one of my favorites is Scharffen Berger which used to be made in Berkeley, California http://www.scharffenberger.com/ . The ingredients on it state cocoa beans, whole vanilla beans--may contain traces of sugar and soy lecithin [an emulsifier]. I had heard that it was going to be off-shored, but the one I have on hand was made in Berkeley. Cocoa butter tends to be a very stable fat.

Then you go into the fancy imported European chocolate. I have occasionally used them, but they don't tend to be available in the small community that I live in.

Thanks for the recipe Kathleen! Will a good quality baking chocolate be so marked on the package?

[Vegetarianslimming] Re: Dilemma of Eating out

I am glad that you found a buffet that had some edible dessert. It must have been a pricier place. We go to a Chinese buffet--there are lots of good veggie items including a tofu entree, but the desert stuff is truly awful: instant pudding, soft ice cream made with hydrogenated fat, cakes made from poor quality mixes, pastries with hydrogenated fats, obviously packaged cookies, and on and on. I usually eat the fruit in the small salad bar -- yes a Chinese buffet has a salad bar that includes sea veggies :-)

One of the ways that I learned to resist desserts in restaurants was to learn what truly great desserts are. That way, I was no longer tempted by most of the garbage that they claim as desserts in most restaurants. I learned to make cakes from scratch, pies made with wonderful ingredients like the finest chocolate, and tried many cookie recipes. I also learned to rarely make desserts, like just for company and then send the left overs home with the guests.

Now that I cannot eat gluten, most of those dessert problems are solved. However, I do make a wonderful chocolate cornstarch pudding with top quality chocolate from scratch--I make it with nonfat milk and add no butter at the end. It is pretty respectable calorie-wise as far as desserts are concerned. Here is the recipe:

1 oz unsweetened chocolate--use a good quality "baking" chocolate, not cocoa powder
2 cups nonfat milk
1/2 cup sugar
3 tblsp cornstarch
1/4 tsp salt
1 tsp vanilla

Dissolve the cornstarch in the cold milk*. Add chocolate, sugar, & salt to the milk mixture. Stirring constantly [I use a wire wisk], cook over medium heat until it comes to a simmer. Stir until it thickens and add the vanilla--brandy would also be a great alternative flavor.

Turn out into small bowls and refrigerate for future treats. I think it is better the next day when it is cold with a little "skin" on the top.

*You can use unsweetened soymilk but it will be higher in fat, therefore calories. If you want to increase the protein and calcium, you can use all or part nonfat canned milk--an old trick I learned from Weight Watchers.

Kathleen

I went out to dinner with a friend last night. We went to a buffet place so I would have veggie choices. I had some great veggies, but caved to the dessert buffet. I had a brownie and a piece of pie.

Hi Jee, welcome to our group.

Actually if you eat fish you are a pescatarian not vegetarian. :-) ALL people are welcome here but please don't discuss meat based food or recipes.

We have a lot of great recipes in our files so please check them out when you can and ask anything. We have a lot of vegetarian old timers and a lot of people who are new to it. We're a friendly helpful group.

Again, welcome!
